Five Favorites for Friday

How’s that for some serious alliteration?

It has been a really exhausting week for so many reasons.  I’m tired.  I’m drained.  My feet hurt.  And I desperately need a shower before I crash face down on the bed and pass out.

You know what those days feel like, right?

For today, I have just a couple of quick favorites from this week…call it leftovers!

Here we go…

1.  Favorite recipe I invented this week based on concepts from Alice Waters’ The Art of Simple Cooking book:

Mediterranean Pizza (very original title, yes?)

  • Use whole wheat flatbread (Naan, pita, Boboli or whatever), any number.
  • Drizzle lightly with olive oil.
  • Add shredded mozzarella or ricota salata cheese.  Or both.  Whatever.
  • Add herbed feta cheese.  Or plain.  Whatever.
  • Add leftover Greek-ish chicken.
  • Slice or chop a couple of pepperoncini.
  • Heat in 400° oven on a baking sheet for 6-7 minutes, or until cheese is melted.
  • Top with oregano or Italian seasoning blend (fresh or dried works).
  • Slice a few red grapes and add to top of pizza after you remove pizza from oven.
  • Pour a glass of chilled white wine.  Pour pomegranate juice for diners under the legal drinking age.  Dinner in less than fifteen minutes.  This is seriously delicious.

2.  Favorite thing I said to Kidzilla this week: “Please do not put your cheeseburger on my computer keyboard.”  Self-explanatory.

3.  Favorite thing Kidzilla said to me this week:  “You are the BEST Mom, Mamma!”  Pretty sure this was because I gave her fresh fruit in a dish for a snack.  Honest.

4.  Favorite thing Fab Hub said to me this week:  “I spackled the holes in the wall.”  Don’t ask…it’s another story.

5.  Favorite purchase this week:  Mini tissue boxes with printed tissues – these are four inches high.  The designs on the box indicate the print on the tissues.  The best?  The leopard print on the left – Zilla’s favorite!
